Compare natural colors under the actual heat history
Peak temperature alone cannot describe what a color experiences in baking, confectionery or beverage processing.

Define the temperature/time curve
Record peak temperature, holding, heating rate, cooling rate and addition stage. Candy cooking, an oven setting and beverage sterilization impose different effective exposures. A supplier table can screen candidates but cannot replace the real formula and process.
Bakery
Base color, reducing sugars, protein, fat and moisture influence the final shade. Test surface decoration, filling and dough separately because their heat histories differ.
Confectionery
High sugar, low moisture and hot cooking can stress some natural colors. Compare feasible later addition, addition after cooling, an encapsulated specification or another candidate while preserving the finished-product requirements.
Beverages
Heat interacts with pH, oxygen and packaging. Controlled comparisons may include before/after heating addition, lower heat burden, light-protective packaging or blends, subject to process feasibility and microbial controls.
Avoid a universal ranking
Beetroot red is sensitive to prolonged high heat; carmine, paprika and caramel are evaluated in some more demanding applications. The actual specification and food system decide the result. Changing the addition point may reduce exposure, but every chosen route still needs real-process validation.
