Choose natural colors by shade, food system and process
A natural color is part of the formulation. Shade, dispersion, processing, storage and market requirements all influence whether a particular specification is suitable.

Four decisions before requesting samples
- Define the target shade: red, yellow, orange, blue, green or a blended tone. Compare hue and any flavor impact.
- Identify the food system: beverage, confectionery, bakery, dairy, meat or seasoning. Solubility and stability requirements differ.
- Record heat and holding time, pH, oxygen exposure, metal ions and package light transmission.
- Check the intended food category, use conditions, ingredient declaration and supplier documents for the destination market.
Color families to investigate
Candidates include beetroot red, carmine, paprika red, red yeast rice color and radish red among red options; gardenia yellow, beta-carotene, curcumin and chrysanthemum yellow among yellow and orange options. Blue and green examples include gardenia blue, phycocyanin and sodium copper chlorophyllin. Brown and dark examples include caramel, vegetable carbon, sorghum red and cocoa-shell materials.

Design the first comparison
Choose two or three candidates after defining the reference shade, product type, heat treatment, pH, packaging and shelf life. Problems such as fading, sediment, specks, separation and batch differences should be investigated before deciding whether to alter processing, change the addition point, blend colors or switch color type.
- Prepare an uncolored base, a reference product, candidate-color samples and process controls.
- Record initial appearance, appearance after heat and light exposure, and storage results.
- For beverages, include pH, light-protected, vitamin C and water-source comparisons.
- For bakery and confectionery, compare heat exposure, oil/water dispersion and the final product shade.
Bring application evidence to the discussion
