Compare pH and the actual base
Fruit drinks, tea drinks, dairy beverages and flavored waters can fade at different rates because their pH, buffering and ingredients differ. Prepare a pH series in the relevant base instead of assuming that a result from another beverage applies.
Record the full heat history
High-temperature treatment, long holding and slow cooling can increase fading. Compare color retention with addition before heating, a controlled later addition where feasible, or a reduced heat burden. Keep the formula and other trial conditions consistent so the comparison can isolate the process effect.
Separate light, oxygen and packaging effects
Clear bottles, strong display lighting and headspace oxygen can increase color loss. Compare light-protected samples with exposed samples, and compare the intended packaging with alternatives. Record the time at which the color becomes visibly lighter rather than relying only on a final photograph.
Isolate ingredient interactions
Vitamin C may contribute to color change in some systems; iron and copper ions can accelerate oxidation. Compare deionized water with the actual water source, a formula without vitamin C, and different juice or tea-base batches. Protein and tea polyphenols also deserve attention where present.
Change one relevant variable at a time. A result in one base is an application finding, not a universal statement about vitamin C or a particular beverage ingredient.
Choose the next trial from the results
Control the dominant environmental or process factor first. Depending on the results, investigate light-protective packaging, an adjusted addition stage, a blended red system or another natural red color. Simply increasing the dose may make the initial sample darker while leaving the fading mechanism in place.
