Beetroot red
Consider pink, magenta and natural fruit/vegetable-red directions, especially where heat burden can be controlled. Heat, light and oxygen sensitivity make real processing and storage checks important for drinks and bakery.
Carmine
Vivid red or pink can be useful in some confectionery, dairy and heated foods. Check animal origin, labeling, destination requirements and customer preferences as well as technical performance.
Paprika red
An orange-red shade and oil-phase or emulsified forms can suit seasonings, fatty systems and particular flavor associations. Confirm dispersion route instead of treating it as equivalent to a water-based red.
Compare in the target food
Define purplish red, red, pink or orange-red with a reference. Test suitable candidates for stability, taste, haze, sediment and labeling requirements. Blending may improve the shade or performance, but each component adds its own review needs and may fade at a different rate. No red is universally most stable regardless of pH, heat, package and food category.
