Different foods need separate trials
For drinks, compare transparency and pH. For confectionery, compare sugar and heating conditions. For dairy, include protein interactions. For bakery, distinguish baked-in color from low-heat decoration rather than transferring one result across uses.
Compare stability under equal conditions
Beetroot red can be sensitive to prolonged high heat, light, oxygen and vitamin C interactions. Carmine may perform better in some heat-treated systems but also responds to pH, metals, protein and the base. Match target color depth and process before comparing heat and storage results.
