What to evaluate
Sodium copper chlorophyllin is a water-soluble green color giving green to dark-green shades. Beverage, confectionery, gel and other water-based applications still need actual-product and destination-market validation. Final green depends on the base, pH, cloudiness and any other blended colors.
Handle the supplied form correctly
- Liquid: mix thoroughly and control the addition point and acid sequence; avoid local acid shock. Observe hue, haze, flocculation and sediment.
- Powder: prepare a fully dissolved stock according to the instructions before adding. Record stock concentration, dissolution time, filtration and appearance before acidification.
- A clear stock does not guarantee a clear acidic finished beverage: ions, ingredients and mixing remain relevant.
Control more than final pH
Record acid identity, stock/base/final pH, acid addition path and mixing efficiency. Water ions, salts, protein, hydrocolloids, flavor emulsions and fruit/tea bases may participate in haze and flocculation. Keep stock preparation, feed point, shear and filtration reproducible.
Heat treatment, cooling, temperature cycling, light and storage may reveal slow aggregation after a clear day-one result. A complete uncolored base is needed to distinguish color-related instability from undissolved ingredients, protein or flavor-system defects.
Observe separate failure modes
- Green bottom particles, loose flocs, whole-bottle haze and wall or shoulder rings.
- Different outcomes at the same final pH when acid or color addition order changes.
- Different sediment behavior with production and deionized water.
- Yellowing, darkening or fading in a clear sample: record this separately from physical precipitation.
Compare green routes
Single-color green and blue/yellow blends differ in shade, compatibility and component fading rates. Use the same base and shelf conditions, recording each component separately. Phycocyanin and sodium copper chlorophyllin address different blue or green targets and processing constraints; choose the target shade first.
Application boundaries
For China, check the exact product against the applicable GB 2760 requirements. A different destination needs its own food-category, composition and labeling review. Send specification, batch, water, pH path, ingredients, heat and timed defect photographs for troubleshooting.
