Phycocyanin and spirulina blue: application selection

Identity and application directions
Phycocyanin is the main coloring component of spirulina-derived blue products. “Spirulina Blue” is also used commercially, but the exact composition and correct name must follow the supplied product and destination-market records. Beverage, frozen-dessert, confectionery and blended-color projects are candidates for testing, not blanket use approvals.
Liquid and powder preparation
- Liquid: mix gently and add at a validated point, favoring a manageable heat burden within the real process constraints. Check uniformity, flocs and post-heat/light storage appearance.
- Powder: dissolve or disperse under controlled conditions as instructed before incorporation. Record particles, specks and storage behavior.
- Changing to later addition must respect the production process, hygiene and equipment constraints; it is not automatically feasible.
Separate color loss from base instability
Protein or hydrocolloid flocs can carry blue color into deposits. Run the uncolored base through the full process before deciding that blue flocs originate in the colorant. This is especially important for dairy or plant-protein systems containing minerals and acid.
Record heating temperature, duration and addition point, along with the pH path, local acid contact, water ions and stock preparation. Compare light-protected and exposed samples from the same batch with packaging, oxygen and storage conditions recorded.
Prioritize realistic trials
Cold processing, controlled heat exposure or a feasible later addition point can be useful screening routes. High temperatures, long holding, repeated heating, bright display and clear packaging need more demanding verification. Frozen desserts still need light, oxygen and storage observations; freezing is not a complete stability demonstration.
Compare blue and blended green
Against gardenia blue, compare target hue, heat, pH, light, compatibility and permitted food category. For blue/yellow green blends, record the separate component changes and combined shade during storage. Keep sugar/acid, temperature and blend ratio fixed for confectionery comparisons.
Market and inquiry details
GB 2760 applies to the Chinese regulatory discussion. Do not infer another market’s permission from a commercial name. Provide food type, target color, pH, heat, packaging, sample and timed photographs, including an uncolored base control.
