Natural colors for beverage development
Beverage color selection starts with pH, heat treatment, packaging, oxygen, ingredient interactions and shelf life. A clean-water color check cannot establish performance in the finished drink.

Start with a defined brief
Set a target shade and reference sample, then record beverage type, pH, sterilization, package light transmission, headspace oxygen and shelf-life expectations. Identify the destination market and food category before treating any ingredient as a viable commercial option.
Different bases require different controls
- Fruit and juice drinks: juice or concentrate base, acidity, vitamin C, heat and clear-bottle exposure.
- Tea drinks: tea polyphenols, water quality, metal ions, pH, heat and sediment.
- Functional or nutrition drinks: vitamins, minerals, electrolytes and botanical extracts.
- Dairy drinks: protein, fat, emulsification, homogenization and post-heating appearance.
- Sparkling or flavored water: clarity, solubility or dispersion, carbonation and light/oxygen exposure.
- Plant-based drinks: plant protein, cloudiness, hydrocolloids, minerals and storage separation.
Introduce color through a controlled trial
Confirm whether the selected specification is soluble, dispersible, emulsified or intended for another addition route. Follow its pre-dissolving or pre-dispersion instructions, recording water quality, temperature and mixing. Avoid adding dry powder directly to a finished drink without a validated method.
Compare low, medium and high trial levels, recording actual addition, pH, target color and order of addition. Use the real mixing, shear, filtration and heat sequence, then observe light exposure, sediment, separation and storage color before scale-up.
Choose candidates, then check compatibility
Consider beetroot red, carmine, radish red, paprika red and blends for red tones; gardenia yellow, beta-carotene and curcumin for yellow/orange; and gardenia blue, phycocyanin and sodium copper chlorophyllin for blue/green. These examples require specification, source, label and destination-market review.
Compatibility in one functional drink cannot be generalized. Use with/without controls for key vitamins, minerals, polyphenols, proteins, electrolytes or extracts in the intended formula, process and package.
Investigate fading, sediment and shade changes
- Compare light-protected and light-exposed samples.
- Compare addition before and after heat treatment as a controlled trial where the process permits.
- Compare deionized water and the actual production water.
- Remove or vary vitamin C, tea base or juice concentrate individually.
- Record initial color, accelerated observations and actual display/storage results.
What the evidence can establish
A beverage category may be suitable for screening a natural color; that does not show that a particular retail brand currently uses it. Current ingredient labels or official product information are needed for that claim. Technical trials likewise do not replace final shelf-life, labeling and regulatory review.
