Why natural colors fade in confectionery
Track cooking, acid addition, moisture, package and display exposure before changing the color.

Heat and holding
Hard sweets, gummies and gel confectionery have different cooking windows. Compare feasible addition after cooling, shorter holding and different cooking endpoints while retaining finished-product quality. Heat can cause fading or hue shifts.
Acid and water state
Acidulants influence pH and some color systems. Record acid-addition timing. Water activity and the gel system can affect migration, specks and uneven depth as well as hue.
Packaging and light
Clear bags or boxes and display lights may reveal fading after the product initially looked right. Keep same-batch light-protected and exposed samples and observe after heating, cooling, packaging and accelerated light exposure, followed by the intended shelf period.
Blends and corrective trials
Unequal component fading can leave a blend more red, yellow or gray. Judge the later shade, not only the initial match. More color rarely removes the underlying cause; isolate heat, acid, light, oxygen and packaging before changing the formula.
