Distinguish low-heat fillings and decoration from colors that pass through the full cooking or baking process.

Confectionery heat burden
Hard sweets, gummies, gel candies and fillings experience different temperatures. Compare color addition stage, addition after cooling and acidulant order where feasible. Record cooked appearance, finished moisture and water activity alongside shade.
Bakery position
Color inside cake or bread must endure the bake, while cream, filling, glaze and surface decoration may face less heat. Lower exposure can make a candidate more practical, but it does not remove pH, oxygen or storage effects. Do not assume beetroot red fits prolonged high-temperature internal coloring.
Light and packaged storage
Transparent packs and strong display light can reveal fading after an acceptable demolding or oven result. Keep light-protected and exposed samples, and observe after cooling, packaging and actual display.
When to compare other reds
If the target shelf life is not met, compare carmine, radish red, paprika red or blends at a matched initial color depth. Review the new shade, heat/storage result and destination/source requirements. Investigate cooking, acid sequence, water activity and packaging before using a higher dose as a correction.
