Beverage, dairy, confectionery, bakery and composite-food applications can be evaluated. Animal origin is a material formulation and customer-communication consideration; source preferences and market requirements should be resolved before trials are treated as a route to commercial use.
Choose a manageable addition route
- Liquid: mix thoroughly before use and add through a validated sequence; check hue, uniformity, base compatibility and storage.
- Powder: dissolve or disperse as instructed before incorporation; record specks, particles, hue and sediment.
- Compare different specifications at a similar initial target color depth and under the same processing conditions, rather than at equal weight.
Variables that can shift the final red
Final shade depends on the pH path, acid type, local mixing, ions, protein and background color. Protein, polyphenols, metals, hydrocolloids and cloudiness may alter the combined visual result. Separate hue changes from sediment, flocculation or colored rings.
Record heat, light, oxygen and storage independently. In dairy, also record fat and protein effects; in confectionery and bakery, compare before heating, after heating and during storage. A clean-water shade is not the finished-food shade.
Compare candidates fairly
Against beetroot red, match the food base, starting color depth, heat history and packaging, while separately reviewing origin, label, customer acceptance and cost. Against paprika red, first establish bright red versus orange-red targets and water/oil compatibility. No specification is automatically more stable in every food.

For China, review the actual product, food category and conditions of use against the applicable GB 2760 requirements. Overseas use needs destination-specific review.
