Where to start
Consider it for products with a relatively low heat burden or a feasible, controlled later addition stage. Beverages, jellies, confectionery, yogurt and ice cream are application areas for screening, subject to the actual specification and intended market.
Stability variables
- pH and buffering: fruit beverages, tea drinks and dairy beverages need separate validation.
- Heat history: sterilization, extended holding and slow cooling may increase fading.
- Light and oxygen: clear bottles, bright display and headspace oxygen can amplify loss of color.
- Formula interactions: evaluate vitamin C, metal ions, tea polyphenols, protein and water-source differences.
Beverage trials
Prepare a pH series, before/after heat comparisons, light-protected versus light-exposed samples, and packaging comparisons. If the formula contains vitamin C, a tea base, juice concentrate or mineral salts, isolate these variables.
A long-shelf-life beverage in a clear bottle needs stricter validation. Reducing the heat burden, changing the addition stage, using light-protective packaging or comparing a blended red system may be worth testing; none is a universal fix.
Confectionery and bakery trials
For confectionery, record cooking temperature, acid addition timing and water activity. In bakery products, distinguish color inside batter from fillings, cream and surface decoration: these uses experience different heat loads and should not share an assumed stability result.
Prepare a troubleshooting brief
Record pH, heat treatment and cooling, packaging, ingredients and when fading begins. Confirm the commercial specification and destination food category before moving from sample work to purchasing.
