Gardenia blue and phycocyanin: practical application limits

Start with the hue

Natural blue options are more limited than red or yellow. Decide whether the product needs blue, blue-green, blue-purple or a blended novelty shade before selecting. Initial blue intensity alone is an incomplete criterion.

Gardenia blue trials

For candidate confectionery, drink or bakery-decoration applications, inspect dissolution, hue shift after heating and compatibility with acidulants, protein and hydrocolloids. Product identity and destination-category review remain necessary.

Phycocyanin trials

Its vivid blue can be sensitive to heat and light. Long-shelf-life or high-heat drinks require careful process and storage comparison. A feasible later addition or lower heat burden may be investigated within hygiene and production constraints.

Blue in blends

Blue/yellow greens and blue/red purples may drift as components change at different rates. Compare individual components and the blend through heat, light and storage in the same base. A successful green mix on day one cannot establish a final shelf shade.
