Temperature and time belong together
A 90°C exposure for 15 seconds and one for 10 minutes are different color stresses; these values illustrate the comparison and are not proposed sterilization settings. Peak temperature, heating, holding and cooling all affect the result. “Heat resistant” alone is insufficient process evidence.
Formula conditions modify the heat response
Acidity, vitamin C, dissolved oxygen and packaging can influence post-heat change. Measure color before and after processing and retain the actual temperature/time curve.
Compare feasible addition points
Some products allow before-heat, later-stage or after-cooling comparisons. Any such route must retain microbial control, process feasibility and applicable requirements. A lower heat exposure is not permission to bypass a validated safety step.
Verify near production conditions
A water bath or laboratory pot is different from plate, tubular, UHT or hot-fill processing. Recheck with a line-relevant method before production. Supplier data can shortlist specifications, but the actual formula and curve decide suitability. Investigate heat, oxygen, pH, vitamin C and package effects before treating a higher dose as the correction.
