Separate dairy product types
Yogurt, dairy drinks, ice cream, cream and cheese products differ in pH, fat, protein and processing. One specification and stability result should not be copied across them.
Use the actual base
Protein affects dispersion and compatibility, while fat can alter shade or separation. Test color, sediment, layers and flavor in the real base, not only water.
Observe each process stage
Pasteurization, UHT, homogenization and refrigeration can expose different changes. Record post-heat and refrigerated results, with light comparisons for the intended package and display.
Sensory and label checks
Consider flavor contributions and consumer expectations about shade and ingredient declarations. Beetroot red can be a yogurt candidate, but fermentation pH, refrigerated shelf life and display light need testing. For specks, first examine dissolution, shear, protein/hydrocolloid compatibility and heat before changing color type.
