How pH changes natural food colors
Compare a pH series in the target formula instead of looking for a universal acid-resistance ranking.

Hue and stability are different results
A color can change hue between acidic, neutral and more alkaline environments. Even when initial shades match, heat, light and oxidation behavior may differ. Anthocyanin systems, beetroot red and some blue/green colors need particular attention to the actual pH path and specification.
There is no context-free “most acid-resistant” color
The product form, pH interval, base, heat, light/oxygen and desired shelf life all affect performance. Success in one acidic drink cannot establish suitability in another food.
Use a controlled series
Select a few points below, at and above the intended formula pH. Keep addition basis and treatment consistent. Record initial shade, post-heat, post-light and 24-hour changes, then continue storage observations. Include taste and dissolution or dispersion state in selection.
Food context matters
Fruit drinks are often acidic, dairy has protein and buffering, confectionery depends on acid-addition timing, and seasonings include salts and colored bases. pH adjustment also needs assessment of flavor, microbial controls and applicable requirements. An acceptable pH alone does not remove heat, light, oxygen, vitamin C, metal or packaging risks.
