Vitamin C and natural color stability

Why it matters
Vitamin C is common in fruit, functional and fortified products and changes the redox environment. Some color systems respond visibly, while others may show a different or limited effect. pH, heat, package and water source can change the outcome.
Three useful sample levels
Compare no vitamin C, the intended level and a higher exploratory level, keeping other factors controlled. Observe after heat, after light exposure and during storage. These are trial comparisons, not recommendations for nutritional formulation or legal use levels.
If vitamin C must remain
Investigate color addition point, oxygen exposure, light-protective packaging, pH or another candidate color system. A color improvement after removing vitamin C does not by itself justify removal: nutrition claims, product goals, flavor and market requirements must be reassessed. Beetroot-red fading should be checked with a real-formula with/without comparison rather than assumed from the ingredient name.
