Source and shade
Beetroot red gives natural red to purplish-red directions. Radish red is an anthocyanin-based option whose shade responds to pH. Strawberry red, berry red and purple-red targets may lead to different choices.
Different stability questions
For beetroot red, focus on heat, light, oxygen and vitamin C interactions. For radish red, examine pH, metals and the food base. Both need actual-process validation; neither has a context-free stability advantage.
Food-specific trials
In acidic fruit drinks, record initial, post-heat and post-light color, plus sediment and real-package shelf behavior. In confectionery, include cooking, acid timing and light. In bakery, separate internal color from post-bake decoration. Dairy requires its own base trial.
Blending needs a storage comparison
The two may be explored together, but unequal component changes can shift the stored hue. A small cup of colored water is a preliminary shade screen, not the finished-food result. Confirm the actual specifications and destination-market conditions before selection.
